2012 Estate Blanc de Blanc
The 2012 Blanc de Blanc features an intriguing range of citrus, balanced with toast from three years aging en tirage. Lemon oil, brioche and honeycomb flavors are supported by brisk acidity and good mid-palate weight. This wine should develop nicely with additional time in bottle.
Our Blanc de Blanc is produced from 100% Estate Chardonnay. Grown in our cool climate, maritime influenced vineyards at elevations averaging 1900 ft. and harvested in late October at low sugar with fantastic acidity. Our mountain vineyards are ideally located for producing structured sparkling wine that has the ability to develop fantastic complexity in the bottle.
The cuvée was fermented in older French oak, and was racked to stainless steel upon completion of primary fermentation. Malolactic fermentation was blocked before tirage bottling. The wine was aged en tirage for 3 years, before disgorgement. We finished the wine extra brut, at 1 g/L of dosage.
